Breakfast Pizza Recipe

You'll need:
Pepperoni
Mozzarella Cheese (I use shredded bagged stuff cause it's easier)
2 Eggs (maybe more if you make a larger one)
Pizza Sauce
Tortilla
Frying pan where the bottom is about the same size as your tortilla

Layer your pepperonis on the bottom of the drying pan.  You might need to add just a drop or two of oil depending on how much your pan likes to stick

Place your mozzarella on top.  Place over a low heat until the cheese starts to melt.

Crack eggs into bowl and add whatever seasoning you like.  Whisk.  Gently spread eggs over top of mozzarella as evenly as you can.

On Tortilla, spread pizza sauce on one side.  Place tortilla with pizza sauce side down on top of the egg/cheese/pepperonis.  Cover with a lid.

Let steam for a few minutes.  Feel free to check on it from time to time.  You want the eggs to be solid enough to flip.

Flip everything over.  Allow tortilla to crisp up then fold over.  Cut into pieces if you like. but I'm usually too lazy for that.

Depending on how much cheese/egg you add and how brown you like your cheese, you might have a hard time flipping.  I will use the 'put a plate on top and flip the whole pan out' method for that, then just slide it back into the pan to finish cooking.  I usually like my cheese very brown and crunchy which is shown in the image.

I don't like a lot of typical 'breakfast' foods, but I like to eat this from time to time!
