Taco Soup
Recipe for super quick and easy taco soup:
1 Pound of Ground Beef
1 Can Black Beans
1 Can Red Beans
1 Can Chili Beans
1 Can Corn
1 Can Diced Tomato with Green Chilies (heat intensity your choice!)
1 Packet Taco Seasoning
1 Packet Ranch Seasoning
Beef Stock (can be substituted with Chicken Stock or even water!)
(Optional)
Sour Cream
Shredded Cheese
Tortilla Chips
Brown Ground Beef. I like to do this in the pot I am going to cook the rest of the soup in to save from having to wash an extra pan. Season to taste.
Add all beans, corn, tomatos, and both packets to pot. I only drain the corn, usually, but you can drain what you think tastes best.
Add beef stock and stir everything together really well.
Bring soup to boil, then reduce to simmer. Cover pot with lid and simmer until you are ready to eat!
Garnish with Sour Cream and Shredded Cheese and enjoy with some chips! (Optional step haha)
This is my mom's favorite recipe for the fall. One pot will make quite a lot, so be prepared to eat it for a few days if only a few people are sharing! It's very easy and nice for when you have a 'low spoons' day, too! c:
